    Conformation of Ionone Cyclodextrin Inclusion Structure and Study of Reaction Thermodynamics

    • Abstract: β-cyclodextrin inclusion complex of β-ionone were obtained by the saturated solution method, which structure was conformed by 1H NMR and DSC methods. Then the reaction thermodynamics were studied, and the stability constant of β-cyclodextrin inclusion complex was calculated (K=1×1011). The inclusion process was an exothermic process. Thermodynamics constant was obtained △H=-58.6 kJ/mol, △S=-114.6 kJ/mol and △G=-2743 kJ/mol (30℃). The study of thermodynamics confirmed that the main driving force of the inclusion reaction was the van der Waals force. It could play an important role in enhancing the aroma quality of cigarette.
